Sweet Potato and Carrot Nuggets - perfect for little hands!
Ingredients:
1 sweet potato
2 carrots
1 egg
1/2 cup breadcrumbs
Salt to taste
Olive oil (for cooking)
Instructions
Preheat oven to 375°F (190°C).
Peel and grate sweet potato and carrots.
Mix grated vegetables with egg, breadcrumbs, and salt.
Shape mixture into small nuggets and place on a baking tray.
Brush each nugget with olive oil.
Bake for 20-25 minutes or until golden.
