Cheesy Chicken Veggie Patties
This hearty, protein-packed puree combines chicken with vegetables for a nutritious meal that's perfect for young children. It's smooth and easy to eat, making it ideal for babies who are teething.
Ingredients:
1 pound ground chicken
1 small zucchini, finely grated
1 small carrot, finely grated
1/2 cup finely chopped broccoli
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Olive oil, for cooking
Instructions
Prep the Veggies: Squeeze out any excess moisture from the grated zucchini and carrot using a clean kitchen towel.
Mix Ingredients: In a large bowl, combine the ground chicken, squeezed zucchini, carrot, chopped broccoli, cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form Patties: Shape the mixture into small patties. This size is perfect for little hands to hold and helps ensure they cook evenly.
Cook: Heat a drizzle of olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for about 4 to 5 minutes on each side, or until golden brown and the chicken is cooked through.
Serve: Let them cool slightly, and serve warm. These patties can be served with a side of ketchup or a mild yogurt dip to make them even more appealing to your toddler.
Serving Suggestion: Pair these patties with a small side of mashed sweet potatoes or a light pasta side (if you’ve got a picky eater like me) to make a complete, balanced meal.
